During the years I owned the restaurant, we developed a lot of different wing recipes. I’ll add the most liked ones here, as I have time.
Buffalo Chicken Wing Sauce
While we had several different sauces we made at ONE Pepper Grill, the Buffalo Sauce was the one that stood out. Here is the recipe for our sauce. This made 1.5 gallons of hot sauce, cut the recipe as needed.
1 Gallon of Frank’s Red Hot
3 # butter
1⁄4 C white vinegar
2 T Worchestershire
Heat the Frank’s in a pot, cut the butter into smaller chunks to aide in the melting process, throw in the butter to melt it, add vinegar and Worchestershire, kill the heat and immersion blend immediately for good emulsification. This will make the sauce become a bright orange color.
Habanero BBQ Wing Sauce
6 fresh habanero (scotch bonnet) peppers
5 cloves fresh garlic
2 tablespoons olive oil
1 cup honey
1⁄2 cup teriyaki sauce
1⁄2 cup any brand regular bbq sauce
4 tablespoons horseradish
2 tablespoons worchestershire sauce
2 tablespoons yellow mustard
2 teaspoons liquid smoke
Remove all seeds, stems and ribs form habanero peppers. Finely dice cleaned peppers, garlic and shallots and saute in olive oil until garlic and onions being to carmelize. Once the garlic and onions being to turn golden brown, add honey, teriyaki, bbq, horseradish, simmer for 15 to 20 minutes.
